Preparation
- Preheat your oven to 350°F (175°C) and lightly grease your donut pan.
- In a small saucepan over medium heat, bring 2 cups of apple cider to a boil. Reduce the heat to low and let it simmer until it thickens and reduces to about 1 cup.
Mixing Ingredients
- In a bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- In another bowl, whisk the egg, melted butter, milk, and vanilla extract. Once your apple cider reduction has cooled, add it to this mixture.
Baking
- Gradually add the dry ingredients to the wet mixture until it’s just combined.
- Fill each cavity of the donut pan about 2/3 full.
- Bake for approximately 10-12 minutes or until a toothpick comes out clean.
Cooling and Coating
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack.
- While they’re still warm, mix the granulated sugar and cinnamon for coating and roll the tops of each donut in this mixture.
Notes
Don't skip reducing the cider for flavor enhancement. Experiment with toppings such as maple glaze or chocolate dusting. Store in an airtight container for freshness.
