  • 2-3 pieces Fresh Peaches Diced

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare Muffin Tin: Grease a muffin tin or line it with paper liners.
  3. Mix Dry Ingredients: In a bowl, combine oats, cinnamon, nutmeg, and baking powder.
  4. Combine Wet Ingredients: In another bowl, whisk together eggs, milk, honey (or maple syrup), and vanilla extract.
  5. Fold in Peaches: Gently mix the diced peaches into the wet ingredients.
  6. Combine Mixtures: Add the dry ingredients to the wet mixture and stir until combined.
  7. Fill Muffin Tins: Spoon the mixture equally into the prepared muffin tin.
Baking
  1. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
Cooling and Serving
  1. Allow the oatmeal cups to cool for a few minutes before removing them from the muffin tin.
