Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1/2 cup protein powder Choose a high-quality protein powder without added sugars.
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Optional Add-Ins
  • 1/2 cup chocolate chips or nuts Add for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, protein powder, almond flour, baking powder, and salt.
  3. In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, milk, and vanilla extract until smooth.
  4. Slowly pour the wet ingredients into the dry mixture, stirring until just combined. If adding chocolate chips or nuts, fold them in now.
Baking
  1. Use a spoon to scoop the mixture onto the prepared baking sheet, forming small biscuits. Flatten them slightly with the back of the spoon.
  2. Place the biscuits in the oven for about 15-20 minutes until golden brown and firm to the touch.
  3. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store biscuits in an airtight container for about a week or freeze for longer storage. Thaw in the fridge when ready to eat.
