Ingredients
  

For the Sushi Rice
  • 1 cup short-grain sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
For the Bowl
  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional) Add according to taste

Method
 

Preparation
  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker or a saucepan and cook according to the instructions.
  3. Once cooked, let it sit covered for about 10 minutes.
  4. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, gently fold this mixture into the rice, making sure not to mash it.
Assembly
  1. Start with a base of sushi rice in a large bowl.
  2. Layer on the imitation crab meat (or real crab), sliced cucumbers, and diced avocado.
  3. Drizzle with low-sodium soy sauce.
Finishing Touches
  1. For those who enjoy a bit of heat, drizzle Sriracha over your bowl. You can adjust the amount according to your taste.
  2. Feel free to garnish your bowl with sesame seeds, green onions, or seaweed salad for an added layer of flavor and texture.
