  • 1 lb Chicken Breast Cubed for marination
  • 2 medium Bell Peppers Cut into bite-sized pieces
  • 1 medium Red Onion Cut into bite-sized pieces
  • 1 medium Zucchini Cut into bite-sized pieces
Seasonings
  • 2 tbsp Olive Oil For marinade
  • 2 tbsp Lemon Juice Freshly squeezed
  • 3 cloves Garlic Minced
  • 1 tsp Paprika For flavor
  • 1 tsp Cumin For flavor
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
Optional Add-Ins
  • 1 cup Cherry Tomatoes For additional flavor
  • 1 cup Mushrooms Sliced
  • 1 cup Pineapple Cut into chunks
  • 0.5 cup Fresh Herbs Parsley or cilantro for garnish

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper. Add cubed chicken breast and let it marinate for at least 30 minutes (or up to 4 hours in the fridge).
  2. While the chicken marinates, cut the bell peppers, red onion, and zucchini into bite-sized pieces.
  3. Thread marinated chicken and vegetables onto skewers, alternating ingredients for a colorful look.
Cooking
  1. Preheat your grill until hot. You can also use an oven or grill pan if grilling outdoors isn’t an option.
  2. Place skewers on the grill and cook for about 12-15 minutes, turning occasionally until the chicken is fully cooked and the vegetables are tender.
Serving
  1. Once everything is grilled to perfection, remove the kabobs from the skewers, sprinkle with fresh herbs if desired, and enjoy!

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning. Ensure even cooking by cutting meat and vegetables into uniform sizes.
