Preparation
- Season the chicken tenderloins with salt, pepper, and garlic powder. Let them sit for about 10 minutes to absorb the flavors.
Searing the Chicken
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until golden brown on both sides and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
Making the Sauce
- In the same skillet, add ½ stick of butter and the minced garlic, cooking until fragrant (about 1-2 minutes). Stir in the red pepper flakes. Let it simmer for 2-3 minutes until slightly reduced.
Combining Chicken and Sauce
- Add the seared chicken back into the skillet, tossing it in the garlic butter sauce. Sprinkle in ½ teaspoon of salt, allowing the chicken to absorb those wonderful flavors.
Cooking the Rice
- In a separate pot, melt the remaining stick of butter. Add the uncooked rice and lightly toast it for a minute. Slowly pour in the chicken broth and remaining salt. Bring to a boil, then reduce to low heat, covering and cooking for about 15-20 minutes.
Finishing Touches
- Once the rice is cooked and fluffy, stir in the fresh grated parmesan cheese. Fluff with a fork and serve it alongside the chicken scampi.
Plating
- Serve the chicken scampi atop a mound of garlic parmesan rice, garnished with freshly chopped parsley if desired.
