Preparation
- Pat the salmon fillets dry with a paper towel to ensure a nice sear. Season both sides with salt and pepper.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Once hot, place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crisp and the salmon is cooked halfway through.
- Carefully flip the salmon over and add the minced garlic to the skillet. Let it cook for about a minute until fragrant, being careful not to burn it.
- Reduce heat to medium-low. Add the heavy cream and let it simmer for a couple of minutes, stirring gently.
- Stir in the pesto sauce and allow the creamy mixture to envelop the salmon. Let it simmer for an additional 2-3 minutes until the salmon is cooked through and the sauce has thickened slightly.
- Remove from heat and garnish with fresh basil. Serve the creamy concoction with a side of pasta, rice, or fresh vegetables.
Notes
Store leftovers in an airtight container for up to 2 days. Reheat gently, adding a splash of cream if the sauce thickens.
