Preparation
  1. Pat the salmon fillets dry with a paper towel to ensure a nice sear. Season both sides with salt and pepper.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Once hot, place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crisp and the salmon is cooked halfway through.
  2. Carefully flip the salmon over and add the minced garlic to the skillet. Let it cook for about a minute until fragrant, being careful not to burn it.
  3. Reduce heat to medium-low. Add the heavy cream and let it simmer for a couple of minutes, stirring gently.
  4. Stir in the pesto sauce and allow the creamy mixture to envelop the salmon. Let it simmer for an additional 2-3 minutes until the salmon is cooked through and the sauce has thickened slightly.
  5. Remove from heat and garnish with fresh basil. Serve the creamy concoction with a side of pasta, rice, or fresh vegetables.

Notes

Store leftovers in an airtight container for up to 2 days. Reheat gently, adding a splash of cream if the sauce thickens.
