Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Cut the salmon into bite-sized pieces and pat them dry with a paper towel.
  3. In one bowl, whisk together the egg. In another bowl, combine panko breadcrumbs, garlic powder, paprika, salt, and pepper.
Cooking
  1. Dip each salmon piece into the egg, allowing any excess to drip off. Coat it in the panko mixture until evenly covered and place them on the baking sheet.
  2. Bake the salmon bites for 12-15 minutes, or until golden brown and cooked through.
  3. While the salmon is baking, mix together mayonnaise, sriracha, and a splash of lemon juice in a small bowl.
Assembly
  1. Layer your base (rice or quinoa) in bowls, top with fresh veggies, and add the crispy salmon bites.
  2. Drizzle with Bang Bang sauce and enjoy!
