Preparation
  1. Place your chicken breasts or thighs at the bottom of the crockpot.
  2. Sprinkle the taco seasoning over the chicken evenly.
  3. Pour in the chicken broth and diced tomatoes, ensuring the chicken is well-covered.
  4. Cover your crockpot and cook on low for about 6-7 hours or high for 3-4 hours.
  5. Once cooked, take two forks and shred the chicken right in the crockpot until it’s nice and pull-apart tender. Mix it with the juices for added flavor.
  6. Spoon the shredded chicken into taco shells or tortillas and add your favorite toppings.

Notes

For extra flavor, marinate the chicken overnight in taco seasoning and a splash of lime juice. Versatile toppings include diced onion, jalapeños, cilantro, or pickled radishes. For variations, try BBQ chicken, buffalo chicken, or a vegetarian option with black beans or lentils.
