  • 1/4 cup butter, softened Ensure it's at room temperature.
  • 1/2 teaspoon cinnamon Adds warmth and flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it.
  2. In a large bowl, mash the bananas and stir in the melted butter. Then, add the sugar, beaten egg, and vanilla extract, mixing until well combined.
  3. In a separate bowl, mix flour, baking soda, and salt.
  4. Gradually add the dry mixture into the banana mixture, stirring just until combined.
  5. In another bowl, mix brown sugar, flour, cinnamon, and softened butter until the mixture resembles coarse crumbs.
Baking
  1. Spoon the batter into the muffin tin, filling each cup about 2/3 full. Sprinkle the crumb topping over the muffin batter.
  2. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the muffins to cool for a few minutes in the pan, then transfer them to a wire rack to cool completely.

Notes

Don’t overmix the batter for light and fluffy muffins. Use ripe bananas for best flavor. Consider letting the batter sit for an hour before baking for improved texture.
