  • 1 pound chicken sausage (or any sausage of your choice) Provides protein and flavor.

  • 1 medium onion, sliced
For the Glaze
  • 3 tablespoons olive oil Ensures proper roasting.
  • 1 tablespoon Dijon mustard Adds flavor depth.
  • 1 tablespoon maple syrup Provides sweetness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sweet potatoes, Brussels sprouts, and onion. Drizzle with 2 tablespoons of olive oil, add salt and pepper, and toss everything together until well coated.
  3. Slice the chicken sausage into bite-sized pieces and add them to the bowl.
  4. In a small bowl, whisk together the remaining olive oil, Dijon mustard, and maple syrup. Drizzle this over your mixed ingredients and toss again to coat evenly.
  5. Spread your mixture out in a single layer on a large sheet pan.
Cooking
  1. Place the pan in the preheated oven and roast for approximately 25–30 minutes, or until the vegetables are tender and the sausages are browned. Stir halfway through for even cooking.
  2. Once fully cooked, remove the pan from the oven. Garnish with fresh herbs if desired and serve hot.

Notes

For a heartier meal, serve over quinoa or rice. This dish pairs well with a warm baguette.
