  • 2 large cucumbers Opt for firm, crisp cucumbers such as Persian or Kirby.
  • 2 tablespoons soy sauce Adjust saltiness according to taste.
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili oil Or to taste.
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • to taste none salt Add according to preference.

Method
 

Preparation
  1. Rinse the cucumbers under cool water and pat them dry.
  2. Use a rolling pin or the flat side of a knife to gently smash the cucumbers, creating cracks without turning them into mush.
  3. Cut the smashed cucumbers into bite-sized pieces and place them in a mixing bowl. Add salt to taste and toss gently. Let them sit for about 5 minutes to draw out excess water.
Making the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, chili oil, minced garlic, and sesame oil. Adjust seasoning based on preference.
Combining and Serving
  1. Pour the dressing over the cucumbers and toss until each piece is coated.
  2. Garnish with chopped scallions or cilantro.
  3. Let the salad sit for about 10 minutes to maximize flavor infusion before serving. Best enjoyed chilled or at room temperature.
