Ingredients
  

Base Ingredients
  • 2 tablespoons olive oil For sautéing
  • 1 cup onion, chopped Adds flavor base
  • 2 cups carrots, diced
  • 2 cups celery stalks, diced
  • 3 cloves garlic, minced For additional flavor
Vegetables
  • 1 cup zucchini, diced
  • 1 cup bell pepper, chopped
  • 2 cups spinach or kale Choose either for added greens
Liquids and Seasonings
  • 4 cups vegetable broth Base liquid for the soup
  • 1 can diced tomatoes (14.5 ounces) Adds acidity and flavor
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and pepper Adjust to your preference

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables have softened.
  3. Stir in the minced garlic and cook for another minute, until fragrant.
  4. Add the zucchini and bell pepper to the pot, mixing well for about 3-4 minutes.
Cooking
  1. Pour in the vegetable broth and diced tomatoes. Stir in the thyme and basil, and season with salt and pepper.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.
  3. Just a few minutes before serving, add the spinach or kale, allowing it to wilt slightly.
  4. Before serving, taste your soup and adjust any seasonings as desired.

Notes

For best flavor, use fresh vegetables. You can also blend part of the soup for a creamier texture. Consider adding beans or lentils for protein.
