Preparation
- Preheat your oven to 400°F (200°C).
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Optionally marinate in olive oil for extra flavor.
- In a shallow dish, combine breadcrumbs and half of the grated Parmesan cheese. Dip each chicken breast into this mixture to coat evenly.
Cooking
- Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and sauté for about 3-4 minutes on each side until golden brown.
- Add minced garlic to the skillet, cooking for about 30 seconds until fragrant.
- Pour marinara sauce over the chicken, then sprinkle the remaining Parmesan cheese and mozzarella cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
For best results, avoid underseasoning and give the chicken ample time to brown properly. This dish can be frozen for later use.
