  • 2 tablespoons Butter For richness and to aid grilling.
  • 1 cup Vanilla ice cream (optional) For serving.
  • 1/2 cup Goat cheese (optional) For serving.
  • 1/4 cup Herbs like mint or basil (optional) To garnish.
  • 1/2 teaspoon Flaky salt (optional) For topping.

Method
 

Preparation
  1. Wash the peaches and cut them in half. Remove the pit.
  2. Lightly score the flesh if desired, to help the sugar caramelize.
Making the Mixture
  1. In a small bowl, mix brown sugar and pumpkin pie spice.
Grilling
  1. Apply a small dab of butter to the cut side of each peach half.
  2. Sprinkle the sugar and spice mixture over the buttered side.
  3. Preheat the grill to medium heat.
  4. Place the peaches cut-side down on the grill and grill for 4-5 minutes.
  5. Turn the peaches over and grill for an additional 2-3 minutes.
Serving
  1. Serve warm with optional toppings like vanilla ice cream or goat cheese.

Notes

Choose the right peaches for grilling and feel free to experiment with flavors. You can use a grill basket to prevent pieces from falling through the grates.
