  • 1/2 teaspoon nutmeg freshly grated preferred
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 eggs beaten in one at a time
  • 1 cup grated carrots
  • 1 cup applesauce
  • 1/2 cup canned pumpkin
Add-ins
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts can be substituted with pecans

Preparation
  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C) and grease your loaf pan.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until well blended.
  3. Blend the Sugars and Oil: In a separate bowl, mix the granulated sugar, brown sugar, and vegetable oil until smooth.
  4. Incorporate the Eggs: Beat in the eggs one at a time until the mixture is light and airy.
  5. Add the Veggies: Stir in the grated carrots, applesauce, and canned pumpkin.
  6. Combine Mixtures: Gradually fold the dry ingredients into the wet mixture gently to avoid overmixing.
  7. Toss in Extras: Fold in the raisins and walnuts, ensuring even distribution.
Baking
  1. Pour the batter into your prepared loaf pan and bake for about 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For best results, use fresh spices. Adjust moisture with milk if batter is too thick. Consider doubling the recipe to make two loaves.
