Preparation
- Start by gathering and prepping all your ingredients. Dice the chicken breast and chop the asparagus, making sure everything is ready for a smooth cooking process.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning it with salt and pepper. Cook until the chicken is golden brown and cooked through, approximately 6-8 minutes. Remove the chicken and set it aside.
- In the same skillet, add the chopped asparagus and sauté for about 2-3 minutes, just until tender. Then, pour in the chicken broth and bring it to a simmer.
- Sprinkle the orzo into the simmering broth, stirring well to ensure it’s evenly distributed. Reduce the heat and allow it to cook for about 10-12 minutes, or until the orzo is fully cooked and has absorbed most of the broth.
- Stir in the cooked chicken back into the skillet along with your choice of shredded cheese. Mix until the cheese is melted and everything is well-combined. Adjust seasoning as needed.
Serving
- Spoon the creamy chicken orzo into bowls and enjoy! This dish pairs beautifully with a side salad or some crusty bread to soak up any extra cheesy goodness.
