  • 1 cup Rice (optional) Use traditional sushi rice or cauliflower rice for low carb.

Method
 

Preparation
  1. Slice the salmon into bite-sized cubes or strips.
  2. Cut the avocado into thin slices and julienne the cucumbers.
Assembly
  1. If using rice, cook it according to package instructions. For cauliflower rice, pulse cauliflower florets in a food processor until resembling rice grains, then sauté lightly.
  2. Start with a layer of your base (rice or cauliflower rice) in a bowl.
  3. Top with salmon, avocado, and cucumbers arranged beautifully.
  4. Add a drizzle of spicy mayonnaise over the top, sprinkle sesame seeds as desired, and include a side of soy sauce for dipping.
  5. If desired, garnish with strips of seaweed.

Notes
