  • 1 cup shredded cheese (cheddar or Mexican blend) Cheese adds creaminess when melted.
  • 1 cup chicken or vegetable broth Use low-sodium broth for lower salt content.

  • Chopped cilantro for garnish (optional) Adds freshness to the dish.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside.
Cooking the Meat
  1. In a large skillet over medium heat, add your ground turkey or beef. Cook until browned, breaking it apart as it cooks—about 5-7 minutes.
Combining Ingredients
  1. Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth. Mix well and let the mixture simmer for about 5 minutes, allowing all the flavors to meld together.
  2. Add the cooked pasta into the skillet, stirring gently to ensure everything is well incorporated.
Finishing Touch
  1. Top the mixture with shredded cheese and cover the skillet for a few minutes until the cheese melts beautifully.
Serving
  1. Once the cheese is melted, season with salt and pepper to taste. Serve hot and garnish with fresh chopped cilantro for an extra pop of flavor and color.

Notes
