Ingredients
  

Dry Ingredients
  • 1 cup almond flour High protein flour alternative.
  • 2 scoops protein powder (vanilla or lemon flavor) Use your preferred flavor for variety.
  • 1/4 cup erythritol or your preferred sweetener Sugar-free sweetener.
  • 1 pinch salt
Wet Ingredients
  • 1/2 cup cream cheese (softened)
  • 1/4 cup Greek yogurt Adds creaminess and protein.
  • 1/4 cup lemon juice Freshly squeezed for best flavor.
  • 1 teaspoon lemon zest Enhances lemon flavor.
  • 1 teaspoon vanilla extract For added flavor.

Method
 

Preparation
  1. Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. In a medium mixing bowl, combine the almond flour, protein powder, erythritol, and a pinch of salt. Stir well until blended.
  3. In another bowl, beat the cream cheese until smooth. Then, add Greek yogurt, lemon juice, lemon zest, and vanilla extract. Mix until creamy and fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture. Stir until you have a thick batter that resembles cheesecake batter.
  5. Pour the mixture into the prepared dish, smoothing it out evenly with a spatula.
  6. Place the dish in the refrigerator for at least 2 hours (or until set) to allow the flavors to meld and the bars to firm up.
  7. Once set, lift the bars out of the dish using the overhang. Cut into squares or rectangles and enjoy your guilt-free treats!

Notes

Store in an airtight container in the refrigerator for up to one week or individually wrap and freeze for up to three months.
