  • 1/4 cup Olive oil For marinating and flavor

  • 1 tablespoon Oregano Dried or fresh
  • 1 teaspoon Salt To taste

For the bowl assembly
  • 2 cups Quinoa or rice Cook according to package instructions
  • 3 cups Mixed vegetables e.g., bell peppers, cucumbers, tomatoes, chopped
  • 1 cup Tzatziki sauce For drizzling over the bowl

Preparation
  1. Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl to create the marinade.
  2. Add the chicken breasts to the marinade and let them soak for at least 20 minutes.
Cooking
  1. While the chicken marinates, cook your quinoa or rice according to package instructions.
  2. After marinating, grill or sauté the chicken on medium heat until fully cooked, approximately 6-7 minutes per side.
Assembly
  1. Chop the mixed vegetables into bite-sized pieces.
  2. In a bowl, serve a base of quinoa or rice, then top with sliced chicken and mixed vegetables.
  3. Drizzle tzatziki sauce over the top before serving.
