Preparation
- In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, and thyme. Add chicken breasts and coat well. Marinate for at least 30 minutes.
- Rinse and cook quinoa or rice according to package instructions. Set aside once cooked.
- Chop the bell peppers, cucumbers, and cherry tomatoes. Set aside.
Cooking
- In a skillet over medium heat, add a drizzle of olive oil. Once hot, add marinated chicken and cook for 6-7 minutes per side or until cooked through (165°F). Remove from heat and let rest for a few minutes before slicing.
Assembly
- Add a scoop of quinoa or rice to the base of each bowl. Top with sliced chicken, chopped vegetables, and a sprinkle of feta cheese.
- Drizzle with dressing if desired, made of Greek yogurt, lemon juice, and more oregano.
- Enjoy immediately or refrigerate for meal prep.
Notes
Allow chicken to marinate for best flavor. Cook in batches for meal prep. Use a meat thermometer to ensure chicken doneness. Fresh herbs elevate the dish significantly.
