Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, and thyme. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  2. Rinse and cook quinoa or rice according to package instructions. Set aside once cooked.
  3. Chop the bell peppers, cucumbers, and cherry tomatoes. Set aside.
Cooking
  1. In a skillet over medium heat, add a drizzle of olive oil. Once hot, add marinated chicken and cook for 6-7 minutes per side or until cooked through (165°F). Remove from heat and let rest for a few minutes before slicing.
Assembly
  1. Add a scoop of quinoa or rice to the base of each bowl. Top with sliced chicken, chopped vegetables, and a sprinkle of feta cheese.
  2. Drizzle with dressing if desired, made of Greek yogurt, lemon juice, and more oregano.
  3. Enjoy immediately or refrigerate for meal prep.

Notes

Allow chicken to marinate for best flavor. Cook in batches for meal prep. Use a meat thermometer to ensure chicken doneness. Fresh herbs elevate the dish significantly.
