  • 2 cups fresh or frozen corn If using fresh corn, grill or boil until tender.

  • 1/2 cup diced red onion Provides a sharp flavor contrast.
  • 1/4 cup chopped cilantro Adds freshness and color.
  • 1 unit lime (juiced) Enhances flavor with tartness.

  • 1/2 cup crumbled feta cheese Provides a salty, creamy element.
  • 1 teaspoon chili powder or paprika Adjust based on spice preference.

Method
 

Preparation
  1. If using fresh corn, grill or boil it until tender. If using frozen, thaw it under running water.
  2. In a large mixing bowl, combine the Greek yogurt, mayonnaise, and lime juice. Stir until well blended.
  3. Add the diced red onion, cilantro, crumbled feta cheese, chili powder, salt, and pepper to the dressing mixture.
  4. Gently fold in the corn until it’s fully coated. Taste and adjust seasoning if necessary.
  5. Let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

For the best flavor, use fresh corn when in season. Customize the spice level by adjusting chili powder or adding jalapeños. Add diced bell peppers or chopped avocado for extra crunch.
