  • 1 teaspoon Italian seasoning

  • 2 large eggs
  • 1 cup whole milk
  • cup pizza sauce plus more for dipping
Toppings
  • 1 cup shredded mozzarella cheese
  • cup mini pepperoni or finely chopped regular pepperoni

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. In a mixing bowl, combine the all-purpose flour, baking powder, and Italian seasoning.
  4. In another bowl, whisk together the eggs and milk, then gradually incorporate the pizza sauce.
  5. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
  6. Fold in the shredded mozzarella cheese and mini pepperoni.
  7. Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
Baking
  1. Bake for about 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  2. Let the muffins cool in the pan for about five minutes before transferring to a wire rack.
  3. Serve warm or at room temperature.
