Method
 

Preparation
  1. Rinse and drain the chickpeas to remove excess sodium.
  2. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion and bell pepper, and chop the parsley.
Combining Ingredients
  1. In a large bowl, combine chickpeas and chopped vegetables, gently tossing them together.
Making the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to taste.
Final Assembly
  1. Pour the dressing over the salad and toss until everything is well coated.
  2. Let the salad sit for at least 10 minutes before serving to allow flavors to meld.
  3. Serve chilled or at room temperature.

Notes

For even fresher salad, use seasonal vegetables. Letting the salad marinate for a couple of hours enhances flavor integration.
