Creamy Mixture
  • ¼ cup mayonnaise For richness.
  • ¼ cup sour cream Add creaminess.

  • ¼ tsp smoked paprika
  • ¼ tsp salt
Toppings

Preparation
  1. Preheat the grill on medium-high heat.
  2. Husk fresh corn on the cob and grill for 10-15 minutes, turning occasionally until charred. For frozen corn, sauté in a skillet with a bit of oil until heated through.
Making the Creamy Mixture
  1. In a medium bowl, mix mayonnaise and sour cream until smooth.
  2. Add lime juice, chili powder, smoked paprika, and salt; stir until combined.
Assembly
  1. Remove corn from grill or skillet. While warm, coat with the creamy mixture evenly.
  2. Sprinkle cotija cheese and chopped cilantro on top before serving.

Notes

Use fresh corn for best flavor. Adjust the heat based on your preference and make the creamy mixture ahead of time for convenience.
