Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • a pinch salt
For the filling
  • 1/2 cup dark chocolate or milk chocolate chips
  • 2 tablespoons heavy cream for a smoother filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract; mix well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing just until combined.
  6. Using a spoon or cookie scoop, drop small amounts of dough (about a tablespoon) onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Place the baking sheets in your preheated oven and bake for 12-15 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Filling and Assembly
  1. While the cookies cool, melt the chocolate chips with heavy cream in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.
  2. Once the cookies are cool, spread a generous amount of chocolate filling on the flat side of one cookie and top with another cookie, pressing gently together.
  3. Enjoy fresh, or store in an airtight container for later.

Notes

For best results, chill the dough if it seems too soft. Use a cookie scoop for uniform size. Consider flavor variations like mint or citrus zest.
