Preparation
  1. In a mixing bowl, combine the Greek yogurt, coconut milk, and pineapple puree. Stir until smooth and creamy.
  2. Stir in the chia seeds thoroughly to ensure they are evenly distributed.
  3. Add your choice of sweetener gradually, tasting as you go.
  4. Cover the bowl with plastic wrap or transfer it to serving containers and refrigerate for at least 4 hours or overnight.
Serving
  1. Once set, stir the pudding and top it with toasted coconut before serving.

Notes

This pudding can be layered with fresh fruits or nuts and stored in an airtight container for up to five days in the refrigerator. If it thickens too much, add more coconut milk to adjust the consistency.
