Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter with the granulated sugar and brown sugar until fluffy and light in color.
  4. Beat in the egg, milk, red food coloring, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Using a tablespoon, drop rounded dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are set but centers are still soft. Allow them to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. Cookies will continue to cook slightly on the baking sheet after removal, so it's better to take them out when they seem slightly underbaked. For an upscale touch, consider drizzling a simple cream cheese frosting over the cooled cookies.
