Ingredients
  

For the Roasted Tomatoes
  • 1 pint cherry tomatoes Ripe and sweet for best flavor.
  • 2 tablespoons olive oil Extra virgin preferred.
  • to taste salt
  • to taste pepper
  • 1 teaspoon balsamic vinegar
For the Bruschetta Topping
  • 1 cup ricotta cheese Creamy and fresh.
  • 2 tablespoons honey
  • 1 clove garlic Minced.
  • 2 tablespoons fresh basil Chopped.
  • extra fresh basil leaves For garnish.
For the Bread
  • 1 loaf rustic bread Ciabatta or baguette preferred.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the cherry tomatoes in half and place them on a baking sheet.
  3. Drizzle with olive oil, and season with salt, pepper, and balsamic vinegar. Toss gently to ensure even coating.
Roasting the Tomatoes
  1. Spread the tomatoes evenly on the baking sheet and roast for 20-25 minutes until blistered and caramelized.
Mixing the Ricotta
  1. Combine the ricotta cheese, honey, minced garlic, and chopped basil in a mixing bowl. Stir until smooth and creamy.
  2. Taste and adjust seasoning if necessary.
Preparing the Bread
  1. Slice the rustic bread into 1-inch thick pieces and lightly brush each slice with olive oil.
  2. Toast them on a grill or in the oven until golden brown and crispy.
Assembling the Bruschetta
  1. Spread a generous layer of the ricotta mixture on top of the toasted bread slices.
  2. Add the warm roasted tomatoes over the ricotta, and finish with additional fresh basil leaves for garnish.
Serving
  1. Arrange your bruschetta on a platter and serve immediately.

Notes

Choose quality ingredients for the best flavor. You can make the tomatoes ahead of time and store them in the fridge. Assemble the bruschetta just before serving.
