  • 1 lb chicken breast Diced
  • 1 cup wild rice Rinsed under cold water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream For creamy texture
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Method
 

Preparation
  1. Dice your chicken breast, chop the vegetables, and rinse the wild rice under cold water.
Layering in Slow Cooker
  1. Place the chopped onion, carrots, and celery at the bottom of the slow cooker.
  2. Top with the rinsed wild rice and diced chicken.
Cooking
  1. Add in the chicken broth alongside garlic powder and thyme. Season generously with salt and pepper.
  2. Set your slow cooker to low and cook for 6-8 hours.
Finishing Touches
  1. Once cooked, stir in the heavy cream and let it heat through for an additional 15-30 minutes.
  2. Ladle the soup into bowls and garnish with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm on the stovetop or microwave, adding extra cream or broth if necessary.
