Preparation
- Preheat a cast-iron skillet or griddle over medium-high heat.
- Divide the ground beef into equally sized balls, about a tablespoon each.
Cooking
- Place a ball of beef on the hot skillet and smash it down with a spatula until it’s about 1/4 inch thick. Season with salt and pepper.
- Let it cook without moving it for about 3 minutes until a crust forms. Flip it and add cheese on top, allowing it to melt.
- While the burgers are cooking, warm the tortillas in a separate skillet for about 30 seconds on each side.
Assembly
- Place the smashed burger on a tortilla and top with your favorite toppings.

Notes
For the best crust, don’t overcrowd the pan. Cook one or two burgers at a time. You can make the tacos ahead of time and reheat them for a quick meal.
