  • 2 cups sourdough starter Ensure the starter is bubbly and active.
  • 1 cup pumpkin puree
  • 1/2 cup sugar For sweetening the dough.
  • 1/4 cup maple syrup Adds sweetness and flavor.
  • 1/2 cup milk Regular or plant-based milk works.
  • 1/4 cup butter, melted Use unsalted butter for best flavor.
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour Measure accurately for best results.
  • 1 tablespoon pumpkin pie spice Enhances flavors of the season.
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda Helps with the rise.
Frosting Ingredients
  • 1/2 cup cream cheese, softened Allow to come to room temperature.
  • 1/4 cup powdered sugar Adjust sweetness as desired.
  • 2 tablespoons maple syrup For frosting.

Method
 

Preparation
  1. In a large bowl, mix together the sourdough starter, pumpkin puree, melted butter, milk, sugar, maple syrup, and vanilla extract until well combined.
  2. Gradually add in the flour, pumpkin pie spice, cinnamon, baking soda, and salt. Mix until a soft dough forms.
Kneading and Rising
  1. Turn the dough onto a floured surface and knead for about 5-10 minutes until smooth.
  2. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1.5 to 2 hours, or until doubled in size.
Rolling and Filling
  1. In a small bowl, mix together additional sugar, ground cinnamon, and melted butter.
  2. Once the dough has risen, roll it out into a large rectangle, about 1/2 inch thick.
  3. Evenly spread the filling mixture over the dough.
  4. From the long edge, tightly roll the dough into a log.
Cutting and Second Rise
  1. Cut the log into 12 equal pieces.
  2. Place the rolls in a greased baking dish, cover, and let them rise again for about 30-45 minutes.
Baking and Frosting
  1. Preheat your oven to 350°F (175°C).
  2. Bake the rolls for 25-30 minutes until golden brown.
  3. While the rolls are cooling, beat together the softened cream cheese, powdered sugar, and maple syrup until smooth.
  4. Spread the maple cream cheese frosting over the warm rolls, letting it melt and soak slightly into the fluffy layers.

Notes

Serve warm with fresh fruit, coffee, or tea. Can add nuts or raisins for additional texture.
