  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large mixing bowl, combine zucchini, cheddar cheese, sugar, vegetable oil, and eggs. Mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
  5. Gradually add dry ingredients to wet mixture and stir gently until just combined.
  6. Grease a 9x5 inch loaf pan and pour in the batter, spreading evenly.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

To keep bread fresh, wrap in plastic at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to 3 months.
